Rainbow trout is a typical coldwater species that is highly susceptible to high water temperatures, hypoxia and environmentally induced oxidative stress followed by high mortality and growth depression under rearing conditions.
The aim of this study was to investigate the effects of environmental factors on protein oxidation and proteolysis as well as on mortality in farmed rainbow trout. Fish mortality increased during periods of exposure to unfavourable factors – overwintering, summer increases in water temperature, hypoxia, and infectious diseases. Protein carbonyl content and protease activity showed a correlation with fish growth rate, corresponding to the level of total metabolism and oxidative processes. In fish affected by high water temperature, hypoxia, or infectious disease, the physiological dynamics of protein carbonyl formation and elimination have been disrupted. Bacterial infection and summer water temperature increases associated with hypoxia lead to the most severe development of oxidative stress in the organs of reared rainbow trout.
